These are the question words of the こ・そ・あ・ど family: これ → どれ, この → どの, こちら → どちら. They ask the listener to choose from a group that both people can see or already know. The answer often uses a こ・そ・あ word: どれですか — これです.
§1Structure
どれ stands alone and takes a particle (どれが, どれを, 〜はどれですか); it is normally used when there are three or more things. どの + noun (どの本, どのバス) always needs a noun after it. どちら is used to choose between two things (casual: どっち). どちら is also the polite form of どこ and asks 'where / which way' (お国はどちらですか). When these words are the subject, they take が, not は.

§3Common mistakes
- Using は after どれ / どの〜 / どちら as the subject. ✗ どれはリンさんのかさですか → ✓ どれがリンさんのかさですか (or リンさんのかさはどれですか). A question word that is the subject takes が. The answer also uses が: これがわたしのかさです.
- Mixing up どれ and どの. ✗ どれ本がおもしろいですか / ✗ どのがおもしろいですか → ✓ どの本がおもしろいですか / ✓ どれがおもしろいですか. どの needs a noun after it; どれ stands alone.
- Using どれ when there are only two things. (Two bags) ✗ どれがいいですか → ✓ どちらがいいですか. With two things, use どちら (casual: どっち). どれ is for three or more.
§4How it's different from similar grammar
- 何 (what)
- 何 is an open question with no limited group: 何を食べますか (What will you eat?). どれ asks you to choose from things in front of you or already talked about: (looking at three cakes) どれを食べますか (Which one will you eat?).
- どこ vs. どちら (where)
- どこ is the everyday word for 'where': トイレはどこですか (Where is the restroom?). どちら is more polite and is often used with customers or people you have just met: お国はどちらですか (Which country are you from?). The same どちら also means 'which of the two', so use the situation to tell them apart: コーヒーと紅茶と、どちらがいいですか is a choice between two things.
§5How this shows up on the JLPT
In N5 grammar Part 1, look right after the blank: if a noun follows (__かばん), the answer is どの; if a particle follows (__が, __を), it is どれ or どちら. Then count the things: two → どちら, three or more → どれ. The pattern AとBと、どちらが〜ですか is very common in comparison questions. In listening, お国はどちらですか asks 'where', not 'which of the two'.
