は does more than mark the topic. It can set one thing against another: 'A is like this, but B is different.' In a negative sentence, は often marks the thing you say 'no' about, and it hints that something else may be different: お酒は飲みません suggests 'I don't drink alcohol, but I may drink other things.'
§1Structure
Noun + は. は takes the place of が and を (魚を → 魚は). Other particles stay, and は is added after them: に → には, で → では, へ → へは, と → とは, から → からは. A contrast is often made with two clauses joined by が: A は 〜が、B は 〜。

肉は食べますが、魚は食べません。
にくはたべますが、さかなはたべません。
I eat meat, but I don't eat fish.
今日は忙しいですが、あしたはひまです。
きょうはいそがしいですが、あしたはひまです。
I'm busy today, but I'm free tomorrow.
わたしはお酒は飲みません。
わたしはおさけはのみません。
I don't drink alcohol (though I may drink other things).
学校へはバスで行きますが、スーパーへは歩いて行きます。

きょうとにはいきましたが、おおさかにはいきませんでした。
I went to Kyoto, but I didn't go to Osaka.
うちでは日本語を話しませんが、学校では話します。

§3Common mistakes
- Keeping を or が and adding は after it: ×魚をは食べません, ×雨がは降っていません. は replaces を and が: 魚は食べません, 雨は降っていません.
- Dropping で or へ when you add は, or putting は before the particle: ×図書館は勉強しません, ×図書館はで勉強しません. These particles are normally kept and は comes after them: 図書館では勉強しません, 学校へはバスで行きます.
- Using が in both halves when you compare two things: 犬が好きですが、猫が好きじゃありません sounds unnatural. Mark both things with は: 犬は好きですが、猫は好きじゃありません.
§4How it's different from similar grammar
- は (topic)
- Topic は only tells you what the sentence is about: わたしは学生です (I am a student). Contrastive は sets one thing against another: 肉は食べますが、魚は食べません. One sentence can have both. In わたしは魚は食べません, the first は is the topic (speaking about me) and the second は is contrastive (fish, I don't eat; other food may be fine).
- も (also)
- も shows that the second thing is the same as the first: 肉は食べます。魚も食べます (I eat meat. I eat fish too). Contrastive は shows that the second thing is different: 肉は食べますが、魚は食べません (I eat meat, but I don't eat fish). Both も and は replace を and が in the same way.
§5How this shows up on the JLPT
In N5 Mondai 1 (choose the particle) you often see a sentence with two halves joined by が and a blank after the second noun: コーヒーは飲みますが、お茶( )飲みません. Opposite endings (飲みます / 飲みません) are the sign that the answer is は. Combined forms such as には, では and へは also appear as choices, and in Mondai 2 (sentence ordering) you must remember that は comes after に, で or へ, not before.
